Umbrian game

Here we are at the current era. Hunting is today a mass sport: the Italian campaigns, above all, the fateful day at the opening are transformed into battlefields in which the more and more scarce game, tries terrified of being well honest.

To eat good game, today, you have to have a reserve or be infallible shooters. However, the gaps in local fauna, however, expresses the market. The Romans imported precious animals for their canteens. There is no reason that we should not also do and in fact, today breeding techniques and above all those of conservation for freezing or frozenlation, allow the presence of certain types of game throughout the year.

It is true – we admit it – that the pheasant or the fresh leader is far preferable, presented at the right degree of pastry and perhaps with a few lead dots that still ends up under the teeth, but it is equally true that to guarantee the regular supply of the market, our hunting heritage is not enough. We must therefore turn abroad, especially to the East, to countries that do not have our problems or who, more simply, have been able to organize adequate farms. The commercial organization of large retailers then enters the field: there have been the games of pheasants, to thousands, for example for the Christmas canteens, which are already ready in the refrigerators’ warehouses of the exporting countries months in advance. And, on the other hand, how do you do many restaurants even rather known to have regular, roe deer or wild boar on the list? The gourmet does not remain – if it wants to be a hundred percent safe of what you eat – hunt personally or make the game hunt from friends, and prepare it. Or buy it in those few trusted stores that really buy animals killed during the jokes. It is necessary, it is logical, to know the various species, to know how to treat and cook them.
